Hmm, I would have to put StatusNotifier and Winterboard about the same. Both are good examples of applications that extend the usefulness of the iPhone to a good degree and both are also examples of the kind of functionality that should have been available in the iPhone to start with.

Also I would like to mention SwirlyMMS since it actually builds in NATIVE MMS support. Just plug in your carrier's setting and its like it came with the phone.
