Snapture - camera replacement
Cycorder - record videos
5 icon dock - put 5 icons in your dock (requires winterboard)
Scrobble - sends songs played in ipod to my last.fm account
OpenSSH - ssh access to iphone

That's really about all I use ... if Apple gave me these programs and root access, I wouldn't need/want to Jailbreak!
