JB + UL N00b questions

Greetings!

For reasons of hating on the AT&T, I suddenly find myself getting ready to JB + UL 2 iPhones - a 2G and a 3G.

BadAsh, perhaps you or someone else could tell me what the best process is step wise to do so?

My impression is:

1) JB both phones.
2) Sync each phone to it's respective library of data / apps via iTunes 8.
3) Run Unlock Apps (best?) and switch carriers.


Questions!
Will I be able to connect to and use the App Store on the iPhone even after unlocking to a different carrier?

Will I be able to use the app store via iTunes after JBing and unlocking?

Do I need to prevent iTunes from connecting to phobos.apple.com on launch?

Can I continue to sync to Mobile Me server?

Anything else I need to watch out for to prevent bricking? (I rely on my phone and data A LOT and am concerned I may "screw the pooch" if I'm not careful.

By you cannot unlock the iPhone 3G.. what exactly does that mean, i was under the impression you could. Or are you referring to the fact that you cannot use the functionality that the above user was talking about?

What that means is you can not unlock the iPhone 3g to use with another carrier besides AT&T here in the USA.
