Will the iTunes ACC version play on my iPod?

When I convert an album to the ACC version will it still play on my iPod?

Assuming you mean AAC, then yes. The iPod will play that file format.

AAC format works well on the iOS devices. It's the default of iTunes when ripping CDs (or at least it was) though you can still pick MP3.
