Two Phones; One iTunes acct; two mail/contact sources??

I just upgraded to the 3GS and am setting my bf up with my 3G. We have one computer, one iTunes acct, but I like to sync my contacts/mail with microsoft exchange and want to sync his with his gmail account. However, when I have his phone plugged in and attempt to change the contacts and mail for his phone, it tells me that making this change will affect all phones on the account.

Is there a way to do what I want?

Go to iTunes and change were his contacts sync or jut uncheck sync contacts.
