iPod touch screen frozen with iTunes logo. How can this be fixed?

Circle with notes (logo), word "iTunes", arrow up and pic of plug in cord frozen on screen; Cannot shut the iPod Touch off; cannot get to any of its data; What can be done to not lose data in it or even just get to the data?
