I don’t utilize iCloud that much because there is no end to end encryption on that part and I like to keep everything local on my iPhone just in case I run into a situation where I have no internet or LTE to access the iCloud.
Plus, I like the fact my content is secure with encryption when stored on my local device with passcode protection.
Actually, there is end-to-end encryption on iCloud.

Unless its changed recently, I believe it has always been this way. Knowing Apple and how they are about security, I dont see them setting it up any other way.
