Hello! I have just backuped my iPhone with iTunes and I noticed that there is abour 5GB data in the backup file. I wonder whether iTunes backs up the apps in my iPhone? If it did so, why just 5GB data? Thanks a lot.

iTunes no longer backs up the actual apps. It backs up the data, of course, and the names of the apps, but when you restore from backup, one step of the restore is to reinstall the apps from the App Store.

See the bottom ("Backups you get from your computer", specifically the list "A backup from your a computer doesn't include" of https://support.apple.com/en-us/HT204136 for the list of what is not included on an iTunes/computer backup.
