Its been a while since i have owned an iphone but i recall in the past that notifications would randomly pop up on screen about updating the device? I prefer to disable this and check for updates manually as i do on android.

Is this possible on the iphone x? Essentially turning off automatic updates and stopping those annoying update your device pop ups??

Nope. Apple cares about their customers' security and do not add a switch to disable those notifications, so that every person knows that there’s an update and they will update their devices as soon as possible, so that they are not vulnerable to any threats.

No, but you can tap on "not now". And "later".
