How did you do that? I’ve tried every setting in portrait mode and I can’t get it to look any different! What am I doing wrong?

That's a combination of using Portrait Mode with the "Stage Light" setting and getting lucky with the image processing cutting out the right stuff. Definitely a hit or miss thing since it's designed to work with people/faces right now and is a beta thing.
