I want to use my iPad pro in my car in a cradle and have my work iPhones screen shared on my iPad Pro

I'm unaware of an app that'll do that, but hopefully, someone who does will reply soon.

I've never heard of anything like that. That's almost like screen recording, and Apple won't allow that.
