IF you're into documents that will eventually end up on a Windows PC - DocumentsToGo is an app you might want... otherwise, on the Mac side, there is a Pages app, as well as Keynote & Numbers.

Dropbox app brings iPad support, fantastic external editing in iPad documents...

Documents to Go and QuickOffice are the two most full featured IMO. The full version of both also allows you to download email attachments right to your phone, edit them, them send back out as an email attachment.
