Is there any reason at all to worry about charging an iPhone 7 Plus with a 2.1 amp current (in this case, from a mophie powerstation plus XL)? Thanks in advance for any advice.

No, the iPhone will take just that much amp as it needs. It is safe to charge your iPhone with any charger, as long as it's a 12v one.
