Welcome to iMore! What watch are you using? Apple Watch is paired with iPhone through the Watch app, and it does a good job of walking you through the process. If it's another watch, you'll want to put your watch in pairing mode (refer to your watch's operating instructions on how to do that) go to Settings > Bluetooth. You should see the watch listed there, where you can select it and start the device pairing procedure.
