The iPhone 6s+ is my first iPhone. I'm curious about what it's like keeping last year's model and running the current iOS version. With Android, I needed to buy the new phone to get the new software, so this is new to me. Performance and software wise, will there be much of a difference at all between getting the next iPhone or just upgrading my 6s+ to iOS 10? I've been under the assumption that the only thing you're really missing out on by skipping one new iPhone is any new hardware upgrades.

I am currently running the latest dev beta version of iOS 10 on my iPhone 6S Plus, and I can straight up tell you that it handles iOS 10 with ease.

You'll start seeing gradual changes in performance midway through iOS 11, if not later. Apple is good at supporting older hardware when it gets "old".
