    Backed up old 6 Plus to Mac then tried to restore new 6S Plus from Mac, but got message that iTunes not up to date - I set up 6S Plus as new phone, did iTunes update, reset and delete phone and tried to do restore from Mac again, but got same message?

    You'll have to be on the latest iTunes (at least version 12) in order to sync with an iOS 9 device.

    The OP already said that iTunes has been updated and yet, the message still pops up.

    The OP could be running an OS that doesn't permit to have the latest iTunes v12 to be installed, like users of Mac OS X Snow Leopard and probably Lion cannot have the latest iTunes v12. He/she didn't mention what OS they're running on their Mac.
