How do I organizing by song or artist?

Organizing by song or artist

in the old iTunes I could view all my songs by either artist or song, then shuffle them or play them in alphabetical order. I can't figure out how to do that with the new apple music app on my iPhone 6

It appears that being able to view / browse by song, genre, and album are missing.

If I understand your question correctly, here is how you get to the songs or genres list. In Apple Music, go to "My Music". By default mine is listed by artist. Click on the red "Artists" text and a popup comes up letting you change the view to albums, songs, music videos, genres, composers, or compilations. To shuffle songs, start playing a song, select the now playing bar, and then make sure the shuffle symbol is on.
