I have many devices experiencing this same issue. I don't believe it has to do with resetting the phone. Not to mention if that is the fix for "every" bug in iOS it's getting to be worse than the "restart Windows" fix for everything in Windows. At least that process was quick.
I can reply, forward, and copy and paste the email content. It's there. It's simply not displaying.
Edit: Please note my issue isn't with all emails. Just from certain senders. If I could identify the issue I could report it to them (pending it being something on their side of course).
