Why do I need to fully charge the phone in order to see how long I've used it and how long it's been on standby today? This doesn't make any sense to me, can someone explain?

The phone didn't start out fully charged and you can't use it as an indicator for battery life until it begins at 100%. Why? I'm not 100% on that so I don't know. Maybe it's like timing a run starting at the finish line and not 1 minute into the run.

I charged it overnight and it was at 100% when I unplugged it this morning.

Did it crash, or did you turn it off?

That wipes out the running stats for battery usage on that charge.

When the usage and standby are empty like that, it means that the springboard app restarted. It can happen two ways - a manual restart (hold power/sleep/wake and Home buttons until you see the Apple logo) OR that you encountered a springboard crash.

Plug the phone into a charger and let it charge to 100% and the stats will start showing again (until the next forced restart or crash).
