    I just purchased a new 6 Plus this week and am trying to pair the bluetooth. The phone keeps scanning for devices & the car says phone slot is full (there are no other phones on my car). I have tried turning off the phone & the bluetooth but every time I turn it back on it is still scanning for devices.

    I would try turning off Bluetooth on your iPhone.
    Then so a hard reset: hold down power button & home button at the same time until the  logo appears.
    Then turn on the iPhone Bluetooth & try to connect to the cars Bluetooth.
    Worth a try.

    Did you contact the car manufacturer and ask them how to free up that used phone slot?
