    these emails are only being deleted on the iPhone and not on the server but I cannot find anywhere in settings that this has been selected or a way to make this stop

    Settings....Mail, Contacts, Calendars...select the hotmail account... See if there's a setting for 'mail days to sync'...set it to an available choice that suits you.
