Why does my iPhone need my name in the Contacts list?
Is it safe to remove my name from the list?

Did you try to delete it? What happened? If you didn’t try, why do you? Worst case is that you have to put it back.

Sure, just tap on "Edit" in the upper right corner and then tap on "Delete" at the bottom.

Your name and address are tied to the APIs that will help you in some apps. Say Maps for example: you open up the Maps app anywhere and once you click on the address bar it will give the option to drive back to home or work. Other apps might use auto fill for you name, email address and phone numbers if you like.

The point is you don't have to have it but it does not hurt to have it either.

I keep my contact information in there because it's the only way siri knows who i am and ties my work and home address with me when i say "take me home" and tracks other things such as who my brother is and cousin so i just say "call my cousin" without having to actually say her name.
