How do I keep iTunes from restoring the songs back to my phone?

Anytime I delete a song from my phone then sync with iTunes they are synced back onto my phone.

How do I keep iTunes from restoring the songs I've deleted from my phone?

Keep the song un-checkmarked in the iTunes library. When you connect your phone, on the summary page, scroll down to where it says to only sync check marked songs.
