Jailbreaking is a term given to a method of modifying iOS that allows the user greater control over the device that includes a lot of personal customization, adding apps to the device that are not in the official Apple App Store, etc...

No.

Yes and no. It will keep a backup of an iPad, iPad, and iPhone but only one of each device. It will backup every time you plug in your device while Wi-Fi is on. It will overwrite the previous backup at that time.​

Is it true iCloud backs up your iPhone when you put it on the charger at night?

Yes. This happens when the phone is connected to WiFi and plugged in. It'll back up automatically once a day when these conditions are met. iCloud must also be turned on and functioning for your device to back up to it. There are plenty of threads on how to set this up, just search iCloud in the forum search.
