    I have just sold my iPhone 5, and am looking at a 64gb 4s. This phone is still on iOS 6, and I would like to keep it that way for a while. Is there a way to restore the 4s to the settings of the 5 without updating to iOS 7? I had the 5 backed up to iCloud and iTunes.

    I don't believe it will let you restore the backup if it's from a higher version of iOS and it'll likely prompt you to update if you try any type of restore

    So, I can connect to iTunes, set up as new phone, and then install the apps that I use, without going iOS7?

    I would use the settings on the phone to erase all content and settings (shouldn't force you to update) and then just sign into iCloud and iTunes on the device and finally add apps using iTunes
