I am showing 1 GB of saved text messages in my usage list, is there any way to delete those and free up that 1 GB of space?

Yep.
Delete all your conversations.

On the main Messages screen (where you see all the conversations), tap edit in the top left.
A red circle will appear next to ech conversation. Tap it.
Then tap delete.
Do this for all the conversations you don't want to keep.
