Can anyone tell me why everytime we get a new firmware, the WIFI MAC address changes? I then have to change it on my DHCP server so I don't have to login to get on my internet at work.

A MAC address is assigned to the actual wifi device installed into the phone. It should never change. It would be like the VIN on your car changing just cause you changed the tires.

Under settings, general, about WIFI address ( which I think is Iphone WIFI MAC address which my DHCP server shows) has changed each time we updated firmware.

I don't see how that would happen. The MAC address is assigned to the hardware and is unique to all devices. If it's changing then something is wrong. Bring it in to apple, but they might be skeptical.
