If you updated on your phone, just delete it then re-sync with iTunes, which will still have the older version. If you updated iTunes already, delete the app there and look in your recycle bin for the older version, then restore that to itunes.

that was a good question... I actually started saving older versions of apps that i've updated. they get automatically moved to trash/recycle bin, just pull them out and save them in a folder. I have tried it with the flashlight app at one point and it worked, just delete the newer version, and put in the older version where the apps are stored for itunes, re sync and you should be good to go.
