I have a program on my 3GS that tells how much ram is used. I formerly had a 3G model, which was stock with 128 mb of ram vs 256. The os on the 3g takes it to about 30 mb vs 140-150 mb on the 3GS. The 4.0 os takes it to appx 70-80 mb and each app in the multitasking pane decreases the number by about 7-9 mb. so if you had a 3g, with 30 mb, you could only have say 3 programs running in the background before the memory would be depleted vs the 15-20 programs on the 3GS. That's my take anyway.
