i have just downloaded iso 5 and lost my apps apart from the normal ones apple have put on. What steps do i have to take in itunes to restore my apps photos music and videos

Did you have a back up from a previous sync?

If not...your apps should still be in your library, simply drag and drop them to your iPhone to reinstall them.
