My understanding is that you cannot. South Korea is one of the few countries in Asia and Europe that do not use the GSM technology...

They don't use GSM, but they use UMTS. They even sell the iPhone in Korea.

So does that mean I use my phone, I don't know what UMTS means?

UMTS is a 3G standard. As for using your iPhone in Korea, it depends on how you want to use it. If you want to use it with your current SIM and use roaming voice and data, it will work fine. If you want to buy a local SIM and use it with that, not so much. That's because Korean telcos lock down the devices that run on their network. If your phone doesn't have a Korean IMEI, they won't let you connect.
