How do I put a new folder on my 12.9" iPad Pro desktop?

Have been keeping a very important doc that needs daily updates in Dropbox. Just purchased an app (non Microsoft) which enables me to edit Office docs so I can carry out the necessary edits on this doc, but I don't want to give the app access to my Dropbox. Thought it might be a better idea to keep this single doc in a separate folder on my desktop and edit it from there. Is this the safest way to go about it? Would I be giving the app permission to look at anything that could be risky?

Does the app not allow the file to be saved locally on the device? Does the app have access to your iCloud Drive?
