I had no issues on iOS 14, but as soon as I installed 14.0.1 that all changed! They have given no timetable for a fix and at that stopped signing 14! Is this the new tactic to convince droves to buy the new iPhone?

Well chock up another issue. The alarm isn’t working now.
Read the O2 sensor ain’t working with betas. Go figure the watch has no known issue except the 3 times it restarted when I first got it on day 1. After the last update 7.0.1 and a clean install it’s been great!!
Have you contact the developer of the app in question?
They might have a defect causing the app to misbehave in specific conditions, and drain down the battery.
iOS doesn’t usually kill apps for fun. It kills them when conditions are met (e.g.: inactivity timeout, but that’s not the only one).
I’m not saying that iOS is in the clear. What I’m saying is that it is not the only factor to consider here
