Up til now, I could always hide the apps that I uninstalled from my iPhone... by going to iTunes on my iMac and hide them after logging in to my account.
But now that iTunes no longer shows apps... I'm wondering how to do this?

I'm sorry, I don't understand the question.

The newest iTunes has gotten rid of the iOS App Store entirely. Its not available for viewing installed or uninstalled apps.

On the iPhone, uninstalling an app should remove its icon from your screens - while you can alway access your apps (installed and uninstalled) from the iOS's own App Store > Updates > Purchased.

There is a method of 'hiding' Apple's own iOS apps (which doesn't actually uninstall them of free up room), but as that does so little in my estimation, I just created a folder called Junk Drawer, and dragged those apps in there to ignore.
