Backup and then restore health data only with a new phone

So, I currently have an apple watch that I use regularly for exercise. I also typically set up new iphones as new phones, I do not restore from any backup.

If I create a local encrypted backup (this should contain all my health data) and then get a new iphone, I can just restore the health data? I don't want the apps etc.

I have never went through a restore process, so I have no idea.

I think you will find it is all or nothing You are right though it does need to be an encrypted iTunes backup.

There are apps that can extract only the health data from (encrypted) backups and strip the rest.

Decipher Phone Refresh trial will do health data for free. The $30 registration will allow you to do other things with it (i.e. if you wanted text messages also)

I've used it, and can verify it works as advertised. I didn't have luck with the iOS apps.

Note that the article in this link constantly refers to the app as Health Importer - an older app last updated in 2015 - when in fact the app is called Health Data Importer. Be careful not to access the older app.
