I recently upgraded my phone from a iPhone 6 Plus to the iPhone 6s Plus. The new phone came with iOS 9.1 installed. Perfect, right? Not quite...

When I connected the phone to iTunes, I could not restore my data until my new phone is using the operating system version the previous phone was using during the backup. That meant I had to install a beta profile on my new phone and update it to iOS 9.2 beta 3. Damn it!

I restored my data to my new phone. Now I want to go back to iOS 9.1 (Golden Master version). I will leave the beta program later on but for now I would like to do this.

I don't believe there is a way to do it without losing all of your data since you can't restore to 9.1 from a 9.2 backup.

You need to put your iPhone in DFU mode then connect to iTunes and it will install a fresh copy of the latest official release of iOS.

Thank you. This was the solution. Putting it into recovery mode and selecting the "update" option was exactly what I was looking for. The phone is updated to the most current "live" software without doing anything to settings and data.

DFU mode was difficult, if not impossible to enter. I have the iPhone 6s Plus which has a faster startup and processor, making the timing in the instructions useless because even after one second of holding the sleep/wake button caused the phone to begin powering up.

But anyway, this worked!
