Something I haven't really thought about as I'm new to jailbreaking, but how will you restore your phone to iOS7 once they've released iOS8?

You won't. This requires saving the blobs currently available for your device and finding a hack to use those to trick your phone into restoring. There hasn't been a method found for the 5 at any point. The 4s was able to go between some iOS5 versions with some very specific blob criteria met.

You can use tools like ilex rat or semi-restore in these cases to do something close to a restore. Ultimately, if you HAVE to restore, you're giving up your jailbreak. That's why some of us get annoyed when "restore" is the first troubleshooting step offered.

Crikey, so it's better to do a restore and fresh jailbreak now with only the apps you intend to use to minimise anything going wrong, rather than having a million Cydia apps installed that can ruin it later on?

Or, just delete the apps prior to a restore. Ie, if you have an app that stores a lot of data, delete that data, delete the app, then run your backup.
