My suggestion is to just do a full update through iTunes.

Load iTunes -> Connect your iPad 2 -> Check for updates (the iTunes screen that shows your iPad 2 info & it should go download 5.0.1 if it's not already downloaded to your machine) and then update. There's no need to do 5.0 then 5.0.1 then.

No you don't. If you just plug into iTunes, it will install 5.0.1 directly.
