New reminders app in IOS 5

I have been trying to use the new reminders app for a week and the more I use it the more frustrated I get.
When I create an item on my task list, sometimes I get a Date and Remind Me option and other times I
just get a Remind Me. I do not care about the Remind Me and shut that off, but need the date each time and cannot assign a date unless I assign a Remind Me and I do not want Reminder Tones coming from the app. Is there something obvious I am missing?

I always see both date and time reminder options. I've never seen just the date.

What are you trying to avoid as far as alerts from this app? If you don't want any notification at all, then just turn it off in the notification settings.
