iTunes 10.5 is only available in beta to developer accounts with Apple as far as I know. And with any beta it's relatively safe but there may always be bugs.

I don't see any harm or damage upgrading to ios5 7 days early. Its not like its paid software thats being stolen or something. Thats like saying jailbreaking is morally wrong because Apple said so. Even though its been to court and jailbreaking is completely legal.
