coz jailbreaking is a process of erasing all your phone features completly.
Sorry, I don't believe that's what jailbreaking is about, or does. I certainly have all the features prior to jailbraeking. Granted, I haven't tried what the OP is asking. But, I don't see a reason to. If I want it back to "out of the box", I'll connect it to iTunes and do a Restore. I'm not 100% sure the Reset in the settings will take it back to factory.
Once you jailbreak, you can't use the "Erase All Content and Settings" option. I think the last time I tried it it froze booting up.
So you if want to start over, you'll have to restore, and then re-jailbreak. Or you could also restore using a custom ipsw from pwnage tool or sn0wbreeze.
