I currently am jailbroken with greenpois0n, and would like to know if it is safe to update my itunes to 10.1 (the newest one) I know that it's not ok to upgrade to 4.2 until a new jb comes out but what about itunes?

Yup...iTunes 10.1 is JB safe for all devices. I'm running 10.1 with my JB iPhone 4 with no issues.
