SHSH Server

I know right now that Apple signs each device restore with a specific SHSH blob but was curious as to why can't the jailbreak community replicate such a server. I know that you can save those blobs as long as Apple is signing them but wouldn't it be better if we just created our own server that replicated Apple signing them so we can leave Apple out of the picture?

You don't think people already thought of this? You would need the Apple's key to make the SHSH blobs. Without it, would take you years / decades to use brute force to make just for one device.

Saurik has his own server that tricks itunes into thinking that it is talking to the apple servers. Hence why you save your shsh blobs so you can downgrade
