Deleting app data/restoring ios

I have an app which has different versions in the us and Australian store. Every time I restore from an iTunes backup and install the us version (the I want) it reads (assuming) the data from the Australian app and forces me to download the Australian app to use the app. Any help? I have made sure I cloud is not backing up for the app even when it is removed. I did try an iCloud restore and it worked as I wanted, but I lost all my message history. Any helpful ideas on what to try?

Also, what is the best way to do a complete wipe and restore without going app by app? Or is there?

Also if I do that will the iCloud data be restore for each app?
