Silly question, but if you had the call on speaker wouldn't you be able to just use the built in recorder app on the phone?

I don't think so... as when you're on speaker phone, the audio circuitry is devoted to that and can't multitask to record... there are solutions that would tap into the headphone port to facilitate recording on an external device...
