You plug into iTunes, update - then re-sync and restore from back-up you should make before updating and all will be as it was.

Does this work the same whether your backed up to iCloud or PC...does it need to be one specific method?

Yes. After the update, you will be prompted to restore from an iCloud backup, iTunes backup or restore as a new device.

Here's something that came to mind. I have a lot of addresses saved in Apple maps, Will those addresses be restored from an iCloud backup After I update to iOS 7 Or should I back up to my PC first just in case? I just don't want to lose those addresses.

The bookmarks in Maps should back up to iCloud and iTunes both... make sure you do a back-up in iTunes before updating and you'll have iCloud and iTunes to restore from.

Glad I stumbled across this thread - this 5 is my first iPhone and hence this will be my first 'big' OS update ... was wondering whether it kept all my apps or effectively did a factory reset. Nasty surprise prevented!

Yes, Apple keeps a listing of all of your downloaded apps. They will always be present in the "purchased" section of the App/iTunes Store so if you need to reset your device and somehow failed to make an iCloud or iTunes backup, your apps are still available to download for free. The only thing you would lose under those circumstance are the data associated with the apps. Therefore, always make a backup either via iCloud or iTunes.
