There's no need to unless the build number of the release has changed from the GM.

If the build number is different... Plug it into iTunes after iOS6 is released

even if the build is different, you don't need to restore unless you have any problems... you can always update to the regular version next time around and you should be at par with everyone

If the build is different, would it be an OTA update or through iTunes?

It would be iTunes.

Ok. Sorry I should have detailed it more. Going from GM to 6.0 with a different build will be iTunes. You connect and Restore.

Going from GM to any further versions should be OTA.

Currently the GM build and the released build are the same build/version.
