I'm having issues with the placement of Emoji.

When you tap on one of the new emojis that came with iOS 13 sometimes I have noticed that it puts them randomly on the previous text message, most of the time it puts them in a new message. How do you prevent it from being put randomly on top of the previous message, do you know what I mean

Perhaps I'm mistaken, but it sounds like you are mistaking emoji for iMessage Stickers, and that you are dragging them into your conversation.

Sorry but I think it might be the stickers now that you mention it. I’m not dragging them I’m tapping them and somehow they appear on top of the message

Yep, stickers have to be dragged.
