Wouldn’t the thief or finder have to know my passcode in order for FaceID to Associate his or her face with the device? Am I missing something or misreading the above statement?

They mean that if the thieves use masks to unlock the X, you’ll be safe. Not that they would go into Settings and changing the saved face as a whole.

If somebody has the ability to build a mask that can fool Face ID, you’d be protected from the phone being unlocked.
