I did a full backup on my 5s without problem. I think you're not using a official cable or your iTunes is corrupt on your PC. If you're using a Mac that last one doesn't apply.

Did you use DFU mode when installing the Beta?

Official cable. iTunes isn't corrupt, its my internet. I used DFU mode.
